The Vietnamese have long fed themselves on rice. When it comes to the Vietnamese cuisine in general and Hanois cuisine in particular, we cannot but mention dishes from rice. Among the dishes from pIain, rice, apart from cooked rice, rice vermicelli is the most popular. There are many types of rice vermicelli.

People in many places can make this ingredient. However, not all people can make rice vermicelli that is as white, soft and tasty as rice vermicelli Hanoi. Thanks to water of great rivers flowing to Hanoi, especially the red river, Hanoi has long been famous for rice varieties of high quality. With cleverness of Hanoian connoisseurs, dishes from rice vermicelli have become more famous. Hanoi has many rice vermicelli making villages, namely Phu Do (Tu Liem district), Tu Ki (Hoang Mai district), and Co Loa (Dong Anh district).

The folk saying “Every delicious grain contains the bitter sweat of the farmer” tells us how hard farmers work to harvest rice grains of the best quality. It’s even harder to make rice vermicelli. Rice to make rice vermicell must be plain rice of high quality harvested in the winter crop. After being soaked in water, rice is washed with clean water. Rice is ground well with water to create a kind of rice dough.

The well-kneaded dough is put into the mould. Rice vermicell is pressed down into the boiling watet , left 2-3 minutes till cooked. It is transterred to cold water to cool and shaped into leaf-liked vermiceIIi or tangled vermicelli. The fined products are put into bamboo baskets paved with green banana leaves, left drained and annealed before being marketed.

Bun Cha Hanoi is another great way to use what we’ve already made (thit nuong, a variation of nem nuong, and picked carrots and daikon). As the name implies, this dish originates from the city of Hanoi in northern Vietnam, vietnam travel, but is very popular throughout the country. It is similar to Bun Thit Nuong, in that both vermicelli and thit nuong are used, however the difference is that it includes a cha (pork sausage patties) and both grilled meats are soaked in nuoc mam cham, allowing it to soak up all the flavors of the nuoc mam. The cha nuong in this dish is slightly different then nem nuong in that there’s less garlic and sugar and no baking powder, although if you made nem nuong, you can certainly use it to make bun cha hanoi.

Bun Moc – Vietnamese Pork and Mushroom Noodle Soup
Bun moc is a vermicelli noodle soup made from a pork and shiitake mushroom infused broth. The meats commonly include pork paste balls made from gio song (raw pork sausauge), cha lua (pork sausage–which is gio song that has been wrapped in banana leaves and boiled). Taken all together, this is a delicious, earthy, yet light noodle soup that’s very popular in the northern parts of Vietnam, but can also be found throughout the country. Unlike pho or bun bo hue, this soup is not as time intensive and is really easy to prepare.

Bun Thang (Vermicelli Soup with Chicken, Egg, Pork)
Bun thang is not available in every Vietnamese restaurant but it’s really simple to put together. It is comprised of Vermicilli noodles, shredded chicken, thinly fried egg, and cha lua (Vietnamese ham/sausage) in a pork and chicken broth. Some recipes also added dried shredded shrimp.
